Using a cheese grater, grate and shred the zucchini into smaller bits. Place the zucchini on a paper towel. Sprinkle salt throughout. This will allow the zucchini to sweat out excess moisture. I let the zucchini sit for 30 minutes to release moisture.
Add the eggs, olive oil, and vanilla to a medium-large bowl and whisk.
Squeeze the excess liquid out of the shredded zucchini. Add the zucchini and ginger to the eggs and olive oil. Stir.
Squeezing the water from the zucchini is really important. You will end up with soggy bread if you don't do this.
Zucchini is a veggie that is filled with a lot of water. You will not be able to remove all of the water and moisture, but following the steps above, will remove most.
For additional flavor you can add lemon zest.
