You can use less lime to save on carbs.
I recommend that you grab an actual living mint plant. They sell them at Trader Joe's for about $2. It comes with soil and needs sunlight and water. I prefer an actual plant over the store bought clamshells with mint because the mint is a lot fresher. The mint that is in the plastic clamshells at the grocery store has been pre-picked. It will be harder to muddle and also will not look as nice if you garnish the drink.
Make sure the mint is fresh and is bright green.
Taste repeatedly and adjust the drink as needed. If you don't want any sweetness in the drink, start with ½ a teaspoon of sweetener and work your way up until you've met what you like. You can always add additional sweetener, but it's harder to take back if you add too much.
