Sprinkle mozzarella cheese onto each of the chicken breasts.
Roll the chicken in half (lengthwise) to seal the chicken. Secure with toothpicks.
Combine the breadcrumbs, Italian Seasoning, salt, and pepper.
Dip the chicken in the flour, then the egg, and then the breadcrumbs mixture.
Air fry for 10 minutes at 380 degrees.
Flip and cook an additional 5-10 minutes, until internal temperature reaches 165.
