These Leftover Turkey Nachos are perfect if you have remaining food from Thanksgiving and you want to put it to use in a dish that isn't boring! Mix and add all of your favorite nacho toppings.

If you have leftover turkey from Thanksgiving, no need to throw it out! There's also no need to make turkey sandwiches everyday either. These nachos are epic, versatile too! Feel free to use this recipe for beef, chicken, etc.
If you used my Cajun Turkey recipe then you are really in for a treat because you are starting with turkey that is loaded with flavor!
Tortilla Chips
This may be the most important part of the recipe! Feel free to use your favorite. I actually use my Air Fryer Tortilla Chips recipe. I use uncooked tortillas (these can be found in the refrigerator section of a store) and follow the same cook time noted in the recipe.
This allows me to season them however I like! I love the Trader Joe's Chili Lime and Everything but the Elote Seasoning for these chips.
How to Make Turkey Nachos
- Preheat oven to Low Broil.
- Spread enough tortillas that will fit into the bottom of a sheet pan.
- Combine cooked turkey, diced tomatoes and chilies, onions, sliced olives and Taco Seasoning in a large bowl. Stir and spread over the tortilla chips.
- Sprinkle the cheese throughout.
- Broil for 4-6 minutes or until the cheese has melted.
What Type of Cheese to Use
The short answer is whatever you like. I use a combination of the following:
- Cheddar
- Pepperjack
- Mozzarella (gives the nachos the nice, cheese pull)
Topping Ideas
- Salsa
- Sour Cream or Greek Yogurt
- Guacamole
- Sliced Avocado
- Pico de Gallo
- Shredded Lettuce
- Pickled Onions
- Corn

Equipment
Ingredients
- Tortilla Chips I use 15-17 large chips. You will need enough to fit your sheet pan.
- 2 cups cooked turkey Sliced into cubes or shredded
- 15 oz canned diced tomatoes and chilies drained
- 15 oz canned black beans drained
- ½ cup chopped onions
- ½ cup sliced black olives
- 1 ¼ cups shredded cheese I used 1 cup cheddar and ¼ cup mozzarella.
- ¼ cup shredded pepper jack cheese Can substitute whatever you wish.
Homemade Taco Seasoning
- 1 tablespoon chili powder
- 1 teaspoon cumin
- ½ teaspoon garlic powder
- salt and pepper to taste
- ½ teaspoon paprika I use smoked paprika
- 1 teaspoon cayenne pepper optional for spicy
Optional Toppings
- salsa
- Greek yogurt or sour cream
- Guacamole
- Jalapenos
- Cilantro
Instructions
- Preheat oven to Low Broil.

We made these for lunch since I just made a bunch of air fryer tortilla chips and I had a lot of leftover rotisserie chicken from our 2 person thanksgiving. Yum! This recipe is a much better use of leftovers than a sandwich. The homemade taco seasoning you have listed is perfect. I love that it doesn’t have any weird chemicals like the packets you can buy. We purchased fresh pico de Gallo from a local Mexican market and it was delicious on these. If your oven doesn’t have a setting for a low broil, I set the broil temp to 450 and it worked well. Took 2 tries with this one.
My first attempt the chips burnt up 😢. My broil rack is not adjustable and I’m thinking it was too close to the heat. So the second time I made sure every chip was covered and broiled for less time. They turned out perfect! The seasoning is spot on. I also portioned the recipe since I was making it for 1. Can’t wait to have it again for lunch tomorrow!

Made these twice last month with ground Turkey. First time around my kids wanted seconds so bad and we had devoured them since they were so good. Second time I made extra. Even the neighbor kids got to enjoy them and they loved them. And what I loved the most is one of the neighbor kids is so picky about food she hardly ever eats at my house but she loved these nachos.
