I’m a huge fan of incorporating avocados into my breakfast when I can. I decided to switch up my normal avocado toast with bread by swapping out bread for a sweet potato instead!

I’m very mindful of food waste. Sometimes it can get really hard, especially with produce! This is a great clean out the fridge meal because you can truly add just about any fresh veggies or fruit and it will make an amazing meal.

My day is always off to a much better start when I fill up on a nourishing breakfast. Avocados are loaded with nutrients and are great for heart health. They will also leave you feeling full! This is a huge win for me.

What Type of Avocados to use

Fresh avocados are important! I like to use locally grown.

How to Pick out an Avocado

Avocados are delicate. You can check to see if the fruit is ripe by giving it a quick light squeeze in the palm of your hand, but you shouldn’t press too firmly. Doing so can bruise the green interior you will ultimately eat.

While you’re in the store, you can test pressing down lightly on the top of the avocado near the stem. If it gives easily and retains its shape, the avocado is ready to eat. If your finger leaves a dent, the avocado is likely overripe and could be brown inside. Ripe and ready-to-eat fruit will be firm but will yield to gentle pressure.

Once purchased, I store my avocados in the fridge. This will keep them fresh longer.

How to Pick out a Sweet Potato

I like to look for sweet potatoes that are thick and long. That will make for really nice slices, that will resemble toast.

Do You Have to Peel the Sweet Potato? Can You Eat the Skin?

According to Healthline, it’s actually healthier to keep the sweet potato skin on. The skin on sweet potato is safe to eat. The skin is rich in fiber, other nutrients, and antioxidants that can help support a healthy gut, increase feelings of fullness, and prevent chronic disease.

How to Make Sweet Potato Avocado Toast

  1. Slice sweet potatoes 1/4th of an inch thick.
  2. Bake or air fry the sweet potato slices.
  3. Load the sweet potato with mashed avocado and your favorite toppings.

How to Keep Avocados from Browning

I immediately store mine in the fridge! This will help out a ton. You can also place a halved avocado in water in a covered bowl or dish or squeeze some lemon over top the exposed surface of the avocado.

Ingredients

  • 3/4-1 pound sweet potato I used 1 large sweet potato. Scrubbed and sliced lengthwise 1/4 inch thick.
  • 1 ripe avocado Mashed
  • 1 teaspoon olive oil

Savory Toast

  • 1/4 cup sliced cherry tomatoes
  • 1 teaspoon chopped cilantro
  • salt and pepper to taste

Sweet Toast

  • fresh sliced strawberries
  • fresh blueberries

Instructions

Oven Instructions

  • Preheat oven to 425 degrees.
  • Coat both sides of each of the sweet potato slices with olive oil.
  • Line a sheet pan with parchment paper. Place the sweet potato slices on the parchment paper.
  • Bake for 5 minutes. Flip and bake an additional 5-8 minutes. Test if the sweet potato has finished baking by piercing it with a fork.
  • Once the sweet potato slices have cooled, load each slice with the mashed avocado.
  • Top with cherry tomatoes, cilantro, strawberries, and blueberries.

Air Fryer Instructions

  • Coat both sides of each of the sweet potato slices with olive oil.
  • Place the sweet potato slices in the air fryer basket.
  • Air fry for 6-10 minutes on 400 degrees. Test if the sweet potato has finished baking by piercing it with a fork.
  • Once the sweet potato slices have cooled, load each slice with the mashed avocado and add salt and pepper to taste.
  • Top with cherry tomatoes, cilantro, strawberries, and blueberries.
