Key Ingredients

What Type of Mushrooms to Use

  • Button mushrooms: Small, round mushrooms with a mild flavor and a firm texture, which makes them a great base for a variety of fillings.
  • Portobello mushrooms: Large, meaty mushrooms have a rich, earthy flavor and they have a large cavity, which makes them ideal for stuffing.
  • Cremini mushrooms: These mushrooms are similar to button mushrooms, but have a slightly deeper flavor. They also have a firmer texture, which makes them a good option for stuffing.
  • Shiitake mushrooms: These mushrooms have a distinctive, meaty flavor that pairs well with a variety of fillings.

What Type of Seafood to Use

I like to use crab and shrimp. Any seafood will work for this dish including lobster, crawfish, and cooked fish.

You can use imitation or real crab meat. Imitation crab is also known as surimi. It’s a seafood product that is made from ground pollock fish and mixed with starch, egg whites, and flavorings. The mixture is then shaped and dyed to have the same color as real crab meat.

For taste, wild-caught shrimp are generally considered to be the best option as they have a more flavorful and firmer texture compared to farm-raised shrimp. Wild-caught shrimp are shrimp that are caught in their natural habitat in the ocean or other bodies of water, as opposed to being farmed or raised in captivity.

I like large shrimp cut into 1 inch chunks.

What Type of Cheese to Use

I like a combination of Parmesan, cream cheese, and mozzarella. Any of your favorite cheese will work. Here are some options.

  • Parmesan: Hard, salty, and perfect for flavor.
  • Feta: Soft, crumbly cheese has a tangy flavor that can add a nice contrast to the rich filling.
  • Cream cheese: This soft, spreadable cheese and helps hold the filling together and adds a creamy texture.
  • Mozzarella: Perfect if you are looking for a great cheese pull.

How to Make Seafood Stuffed Mushrooms

Detailed measurements and full instructions can be found in the recipe card at the bottom of this post.

  1. Cut the stem out of the mushroom to prepare it for stuffing. I first chop off the stem, and then make a circular cut around the area where the stem was. Continue to cut until you have removed excess mushroom.
  2. Combine the softened cream cheese, shrimp, crab, shredded cheese, Old Bay, salt, pepper, garlic, and Worcestershire sauce in a medium bowl. Stir to combine. I like to reserve some of the Parmesan for the mushroom topping at the end.
  3. Stuff the mushrooms with the cheese mixture.
  4. Bake or air fry.
