This Smoked Salmon Eggs Benedict is served with a toasted English muffin, smoked salmon, a poached egg, and drizzled in hollandaise sauce. This is a must-have for any breakfast or holiday brunch spread!

As a frequent bruncher, I often always order the Eggs Benedict with mimosas for my meal! I love a nice, runny egg and when salmon was brought to the dish, I was immediately sold!
You don’t need a runny egg for Benedicts. Medium or hard-cooked will work great, too!
This dish is healthy as I use a whole-wheat English muffin, organic pasture-raised eggs, and sauce with no added sugar!
Looking for low-carb? Skip the muffin and serve this over greens or a salad.
Why Is it Called Eggs Benedict?
There are a couple of theories and legends on how the dish came about. One of the most notable is that a Wall Street broker, by the name of Benedict ordered the toast, bacon, poached eggs, and hollandaise at the Waldorf Hotel in 1894. You can read more about how eggs Benedict got its name here.
From there, the toast was eventually swapped for an English muffin and the bacon was replaced with ham.
Hollandaise Sauce
Hollandaise Sauce is a staple for Benedicts! It’s often made using egg yolks, butter, and lemon juice. How does it taste? I’ve always felt like it tastes like lemony mayo. It’s slightly acidic and very rich in flavor.
I’m using the hollandaise sauce from Primal Kitchen, made with absolutely no dairy! It’s made with cashew butter, avocado oil, and organic egg powder. It’s keto-friendly and paleo and I love that it’s made without canola oil or soy.
How to Poach Eggs
You can cook your eggs however you like! Scrambled eggs, Air Fryer Boiled Eggs or Instant Pot Boiled Eggs would even work!
Poaching eggs takes practice. If you’ve never done it you may fail at your first attempts! Years ago, I certainly did.
Here’s how to do it on the stove:
- Add 1 inch of water to a saucepan and bring to a boil.
- Crack the egg into a small bowl.
- Add one tablespoon of vinegar (clear, regular works best) to the pan.
- Pour the egg from the bowl in to the water. You don’t want to crack the egg into the water. Turn the heat off the pan and cover the pan.
- Cook for 5-7 minutes and remove with a slotted spoon.
I often make my eggs using the Instant Pot, though the method isn’t fool proof.
- I spray a small glass bowl with oil and then add the egg.
- Add the trivet to the Instant Pot along with 1 cup of water.
- Place the glass bowl on the trivet.
- Pressure cook for 4 minutes with quick release of steam.
Play around with the cooking times to get your preferred texture. I have noticed organic cage-free, pasteurized brown eggs require a longer cook time than standard eggs.
