This Quick and Easy no bake lasagna soup is the best recipe for a comforting weeknight meal. The dish is made with ground beef, marinara sauce, basil, and topped with parmesan and ricotta cheese.

You have 3 ways and options to prepare this recipe. You can prepare it on the stove, in a slow cooker or an Instant Pot pressure cooker. This dish is simple so stovetop is my favorite method.
What Type of Meat to Use
I use organic, grass-finished beef. You can also use ground turkey, ground sausage, ground chicken, or whatever you like.
What Type of Pasta to Use
I use standard lasagna, not oven-ready. Oven ready isn’t necessary for this recipe. You can use any type of pasta you wish. If you want to prepare this recipe in the Instant Pot, cook the pasta in the Instant Pot for half of the time noted on the package and subtract one additional minute. Pay close attention to this, especially, if you are using whole wheat pasta.
What Type of Marinara to Use
You can use my Homemade Marinara Sauce Recipe here or grab any of your favorite store-bought sauce.
How to Make No Bake Lasagna Soup
Detailed measurements and full instructions can be found in the recipe card at the bottom of this post.
- Cook the pasta in accordance with the instructions on the pasta package.
- Heat a skillet on medium-high heat.
- Add ground beef to the Dutch oven or large pot with the onions, garlic, Italian Seasoning, dried basil, salt, and pepper to taste.
- Stir and cook until the beef is no longer pink.
- Add in marinara sauce, broth, and pasta noodles. Stir.
- Cook on stovetop, Instant Pot, or slow cooker.
- Top the soup with ricotta cheese, mozzarella, and parmesan cheese.
How to Store Leftovers
Leftovers can be stored tightly covered and sealed and stored in the fridge for 3-4 days.
How to Reheat
This is a great soup for leftovers and reheating. I recommend storing the cooked noodles separate from the soup if you know you want this dish for meal prep and if you want to avoid soggy noodles. This dish can be reheated in the microwave or on the stove.
Freezer Tips
You can freeze this soup. I like to use these freezer molds from Amazon. It allows you to freeze the soup in individual portions. Defrost overnight in the fridge.

Made on the stovetop for Halloween! Cooked the noodles fry as you tried with your IG Hamburger Alfredo recipe. The soup is a winner per usual!

Just made this soup and it is delightful! I used ground chicken. I used oven ready noodles (oops!) but it was fine! So quick and easy and flavorful, just like all of Brandiโs recipes are!
