Easy, Keto Low-Carb PF Chang’s Chicken Lettuce Wraps is a quick copycat recipe that is healthy and low in calories. This tutorial outlines what lettuce is best for wraps and how to make the wraps. This dish is drizzled in decadent peanut butter sauce that has fewer calories and carbs than the PF Chang’s version.

PF Chang’s is a restaurant 18 year-old me considered fancy. I loved going! I would order the lettuce wraps for an appetizer and the Singapore Street Noodles (they have since changed the name) for my entree. One serving of lettuce wraps has 67 grams of carbs! Those wraps are loaded with sugar.
I had to come up with an alternative that is still tasty.
Table of Contents
Why Are PF Changs Lettuce Wraps So High in Carbs?
Sugar. Many of the ingredients are loaded in sugar. The main culprit is hoisin sauce. Most recipes use about ¼ cup of hoisin sauce. This equates to 36 grams of net carbs. If the wraps from PF Changs have 67 grams of carbs, then you can bet they are loading their sauce with a LOT more sugar.
For this recipe, I ditched the store-bought hoisin and chose to make my own. That way I can use a zero calorie sweetener in the sauce. Monkfruit is my favorite.
What can I substitute for hoisin sauce?
You can make your own hoisin using natural peanut butter, monkfruit sweetener, soy sauce, Sriracha, sesame seed oil, garlic powder, salt, and pepper.
How Many Calories Do PF Chang's Lettuce Wraps Have?
The PF Chang's lettuce wraps have 660 calories, per their website. The site doesn't specify how many servings this denotes.
What Can I Put In Lettuce Wraps?
Chicken and steak lettuce wraps are usually my go-to's. Be sure to check out my Keto and Low-Carb Buffalo Chicken Lettuce Wraps and Steak Lettuce Wraps.
How Do You Make PF Chang’s Lettuce Wraps?
You will need lettuce wraps (see note below), the ingredients for homemade hoisin (see above), rice wine vinegar, water chestnuts, green onions, and soy sauce. Combine the ingredients in a skillet. Serve over lettuce wraps.
What sauce is in PF Chang's Lettuce Wraps?
The base of the sauce is hoisin sauce and rice wine vinegar.
What Lettuce is Best For Wraps?
If you would like the wraps to look like they do in the restaurant, you will need to use bibb or butter lettuce. Butter lettuce is really small and perfect if you are going to use the wraps as an appetizer. Whole Foods is the only store I consistently see butter lettuce. With other supermarkets it is very hit or miss for me.
I often turn my lettuce wraps into a main dish. I love to use romaine lettuce for main dish wraps. Romaine is larger and longer than bibb/butter lettuce. It can also withstand more filling. Because this recipe has sauce, you will need to be careful with overfilling the lettuce. Romaine makes it much easier to work with.
These lettuce wraps can be great for meal prep. Pack your lettuce in Ziploc bags (air-tight) and place your chicken filling in this freezer friendly Tupperware from Amazon. You can even freeze this dish for future use!

I don't think I've ever actually been to PF Changes before - but these lettuce wraps are amazing even if I don't know what the original is supposed to be like, haha! I love that these use ground chicken - it's so cheap but I never have any good recipe ideas to use it in.

These are SO GOOD!!! I used chicken breast instead of ground chicken bc I like the breast better but they still turned out amazing. Question-can you make ahead the hoisen sauce, or will it not keep?
staysnatched says
You can jar and store it in the fridge for a week or two.
Nicole says
Can you omit the sugar all together? How significantly would it effect the taste?
staysnatched says
You can if you wish. The absence of sugar will significantly impact the flavor.
Linda says
@Nicole, I did not add any sugar because I think my rice vinegar had a little. Was still delicious.
Jenny says

I am on the new Southbeach Diet & I was trying to find a good Keto-friendly recipe. I love Asian flavors & thought this sounded good. I made it tonight and WOW, they were delicious!!! The crunchy chopped water chestnuts adds a wonderful texture and the sauce is the bomb. It’s the BEST thing I’ve eaten in a while. It satisfied my Asian cuisine cravings. Thank you & nice job!!!
staysnatched says
That's so good to hear! Thank you for sharing and glad you enjoyed the recipe.
Tammy Trincilla says
This was AMAZING! I varied it slightly by omitting the water chestnuts and keeping the siracha on the side. I used xylitol and added a couple more tsps. I *also* added a tsp of ginger paste & caramelized the onions in bacon grease and butter to up the fat and natural sugar. I cooked it until all the liquid absorbed and thickened.
My new favorite recipe!
staysnatched says
I'm glad you enjoyed the recipe.

This is my new favorite low carb meal. I could use the water chestnuts because the amount of carbs and I despise celery so I substituted cocktail peanuts. 36 peanuts to the dish only added 2 net carbs to the whole dish, kind of Kung Pao style. his will be on the menu every other week.
staysnatched says
I love your modifications! I will have to try that!
MEC says
Can you use almond butter in place of the peanut butter
staysnatched says
Sure, if you want.

Ha ha! Doubling the recipe is a good idea!
Traci Whiting says
This was so good! My husband and teens raved about them, too
I used chili paste because I didn't have sriracha. I used chunky peanut butter.I also used about a teaspoon of ginger like what you can buy in the tube in the produce section.
And my grocery store didn't have butter or bibb lettuce, so we use green leaf lettuce and it was great.
staysnatched says
Sounds great with the substitutions!
Lori D says
These are just incredible! Love that you lowered the amount sugar in these. You have now taken over five days of our monthly meal plan... ❤️ (Waiting on the air fryer book for even more ideas.) Thank you!!

I can't wait to try this. I am confused why it says not to use water chestnuts if strict keto but.... says nothing about the onions. Onions have more carbs than one might think. I'd lower the amount of water chestnuts, add mushrooms and nix the onions all together. Just my thoughts.... Can't wait to try this sauce though!!
staysnatched says
Thanks for sharing your thoughts. No need to be confused. I simply shared my thoughts. I hope you enjoy the recipe.

- Easy cooking
- Ability to play around and make different variations
- FLAVOR!
List could go one. Do not count this one out!

So good, will be making this all the time. I did made a few adjustments but mostly stuck to the recipe (subbed the water chestnuts for fine chopped shiitake mushrooms, added cauliflower rice, and used fine chopped chicken breast vs ground).
Really great recipe!!
staysnatched says
Sounds great. Glad you enjoyed it!

My whole family loves this recipe! Normally, I print a recipe from the internet, try it, make notes & changes, keep the printout and see if it stays in rotation before adding it to our recipe box. This one went straight into the recipe box after the first try. We've enjoyed it with ground pork and ground beef.

OH MY....WOW, these are so delicious. When I keyed in the ingredients into MFP I could not believe how low in calories these are. They definitely feel like the most indulgent and satisfying meal you can imagine. As good as PF Chang’s version. Delicious. The only modifications I made were omitting the regular onion and adding chopped baby bellas. These will definitely be in my rotation. Thank you for the recipe!
staysnatched says
That sounds like a great substitute!
Janet says
Hi Kyndra,
I'm just getting started on Keto (next Monday). Your recipes sound great but I'm a little confused with this one for the Hoisin Sauce. You state in the recipe to use rice wine vinegar but your link shows rice vinegar, not rice WINE vinegar. I have both. My rice vinegar says it's mild & mellow. My rice cooking wine (mirin) says sweet and savory, or is the mirin not rice wine vinegar? Is either the correct one to use?
staysnatched says
Yes. And if you’re strict keto use whichever one fits your macros.
Keisha says
This is AMAZING!!!! Even the non Keto folks in my family loved it. I'm definitely adding it to my dinner rotation. Thank you so much for sharing.

Great recipe! Its more like a peanut sauce than a hoison, but its fab! I didn’t have water chestnuts or swerve so I substituted pecans and 10 drops of stevia(from one of the small bottles). Turned out great : D

The sauce is a combo of both. Thanks for sharing!
