I used to be a Panera addict! And there's absolutely nothing wrong with that statement because they truly make bomb salads and soups! Although I do hate that over the years they have gotten rid of some of my favorites.

What is Green Goddess Salad Dressing?
How does it taste? It's creamy, tangy, and tastes a lot like herbs, seriously the best! From the list noted above, you can see why. Herbs and spices are my favorite way to jazz up a dish and upgrade it from boring. I like to use the Primal Kitchen Green Goddess dressing.
How to Make Green Goddess Cobb Salad
- Add your greens, chicken, avocado, bacon, cherry tomatoes, pickled onions, and boiled eggs to a bowl.
- Drizzle with Primal Kitchen Green Goddess dressing.
How to Make the Chicken
I like to make my own chicken using my Air Fryer Chicken Breast recipe. This produces really juicy chicken. From there, I slice it into strips. You can even marinate the chicken using this Primal Kitchen Green Goddess dressing for added flavor.
You can also buy a cooked rotisserie chicken or store-bought pre-cooked chicken strips. It's your choice.
How to Make the Bacon
I love to make it using my Air Fryer Bacon recipe. It's crispy, crunchy, and ready in minutes!
How to Make the Eggs
I like to use my Air Fryer Eggs or Instant Pot Boiled Eggs recipes.
How to Make Pickled Onions
- Add ¾ cup of apple cider vinegar, ½ teaspoon of salt, and 1-2 tablespoons of sweetener to a saucepan on the stove on medium-high heat. You will need enough apple cider vinegar to completely cover the amount of onions you use in a mason jar. You can use more or less depending on the amount of onions you use. The amount of sweetener and salt you will need will vary based on the your taste and the amount of onions you use. Use whatever amount of onions you want.
- Stir the mixture until the sweetener dissolves.
- Add the onions to a small mason jar. Pour the vinegar mixture in the jar. Shake.
- Marinate for 1 hour. Store leftover pickled onions in the fridge and in jar with the vinegar.

How to Make Salad Ahead of Time
Greens and produce will become bad due to moisture. If you want to keep your produce alive and crisp you will need to make sure it's fully dried, not damp and stored in an air tight container. These mason jars work great.
Always store your dressings separate from the produce. These portable salad dressing containers work great.

Green Goddess Cobb Salad
Ingredients
- 1 cup chopped romaine lettuce
- 1 cup baby kale
- ½ cup chopped red leaf lettuce
- ½ cup arugula
- 4-5 oz cooked chicken breast Sliced into strips.
- 1-2 slices cooked and crumbled bacon
- ¼ cup sliced avocado It will vary based on the size of the avocado but this is about ¼ to ½ of a full avocaod.
- 2 tablespoons sliced red pickled onions You can substitute red onions if you don't have pickled. See notes for how to make your own.
- 5 grape tomatoes Sliced in half
- 1 hard boiled egg sliced in half
- Green Goddess Salad Dressing
Instructions
- Combine all of the ingredients in a large bowl.
- Drizzle with Green Goddess dressing.

Made this last night for dinner as I was craving a big ass salad and it came through my inbox at just the right time! I forgot to get bacon at the store so subbed it with smoked chicken sausage that I crumbled and cooked to crispy little bits. It turned out so delicious!!
