I love brussels sprouts, these caramelized balsamic bacon brussels sprouts are just the trick. I spent days thinking about which green veggie I would use for New Year’s dinner. Brussels sprouts seemed like the best choice. Though they are becoming more and popular, they still aren’t a common side dish. Of course, I wanted a very special dinner for New Years Day! I wanted something that would make me feel great about 2017. This dish is under 80 calories, SCORE!

I used Trader Joe’s Uncured, Nitrate-Free bacon for this recipe. It is my personal favorite. Nitrates are found in most bacon, deli meats, and more. There is a lot of research that indicates nitrates are not good for our bodies and may contribute to cancer. I generally prefer regular bacon to turkey bacon because only 1 gram of fat is eliminated per 2 slices of turkey bacon with the switch. For me personally, this benefit is not meaningful, especially with the availability of a nitrate-free option. Feel free to use what you wish.

Ingredients

  • 3 slices uncured, nitrate-free bacon
  • 30 brussels sprouts sliced in half
  • 1 tbsp balsamic vinegar
  • 3 garlic cloves chopped
  • 1/4 onion sliced

Instructions

  • Heat a skillet on medium-high heat.
  • Cook the bacon in the pan for 2-3 minutes, turn to cook both sides.
  • Add the garlic and onions. Saute until fragrant.
  • Add the brussels sprouts. Cook for 4-5 minutes, turning frequently.
  • Stir in the balsamic vinegar. Cook for 1-2 minutes.
  • Serve!

These were so easy to make! I had some Brussels sprouts and didnโ€™t know what to do with them. Brandi to the rescue. The ingredients are simple but the dish was so flavorful. The balsamic gave it a nice hint of sweetness with a tang. And they caramelized beautifully. Thanks for this easy recipe!

Fantastic sprouts! We are VERY healthy eaters in this house so don't sweat the bacon(lol) its such a small amount for the number of servings. And.... leftovers freeze well too!
