Ok, folks who don’t like mayo….we hear you loud and clear! And while I do enjoy mayo, I also enjoy avocados and guacamole flavor! My Homemade Guacamole and Air Fryer Tortilla Chips are in constant rotation in this house!
This is also a great low-carb side dish or appetizer. I have found myself also enjoying these for breakfast. They are the perfect treat!
How to Pick the Perfect Avocado
Be sure to choose the appropriate avocado. It should feel soft, but somewhat firm. It shouldn’t be overly soft if you were to squeeze. It should also be a nice dark green color.
How to Boil Eggs
I like to eliminate some of the guessing when boiling eggs and I use my air fryer or Instant Pot to make them. Check out my Air Fryer Hard Boiled Eggs recipe and Instant Pot Boiled Eggs recipe
Here is how to do it on the stove:
- Place the eggs in a saucepan.
- Cover the eggs with cold water. Fill to the top of the eggs.
- Bring the saucepan to a boil.
- Once the water boils, remove the pan from the heat. Cover the pan.
- Allow the eggs to sit for 10 minutes.
- Remove the eggs and place them in an ice bath to cool for 10 minutes.

Can you make them ahead of time? Yes, deviled eggs can typically be made 2-3 days in advance, but with this recipe, the avocado will begin to brown at the top, within hours. If you plan to serve these for an event, make them up to 3 hours in advance.

Store the eggs in an air-tight container.

Notes
- Make sure your eggs are hard boiled. With medium or soft boiled eggs, you will struggle to remove the yolk from the center.
- If you aren’t making these for a crowd, you can half the recipe or cut it into 1/3, etc.
- I like to use a food processor to produce finely chopped onions and cilantro.
