Making veggies in the air fryer is a great way to diversify the healthy vegetables you're eating on a regular basis. When you're burnt out on cooking, let air fried food work in your favor!
What Veggies Can You Air Fry?
You can air fry anything. Anything you can bake in the oven can be air fried. Here's what I use in the recipe.
- Zucchini
- Squash
- Red Onions
- Carrots
- Broccoli
- Cauliflower
Favorite Marinades
I always like to drizzle my vegetables in a liquid agent first. This helps the dry rub spices and seasonings adhere, and it enhances the flavor.
- Olive Oil
- Avocado Oil
- Balsamic Vinegar
- Honey
- Butter
- Primal Kitchen Cilantro Lime Marinade
- Liquid Smoke (for grilled veggies taste)

- Homemade Ranch Seasoning
- Homemade BBQ Seasoning
- Homemade Taco Seasoning
- Garlic Powder
- Smoked Paprika
- Herbs de Provence Seasoning
How to Make Air Fryer Vegetables
- Drizzle the veggies in olive oil and sprinkle with garlic, oregano, smoked paprika, salt and pepper to taste.
- Place the veggies in the air fryer basket.
- Air fry.
Air Fryer Temperature
I use 350 degrees.
Cook Time/How Long to Cook
The veggies will take 12-15 minutes.
Can You Steam Veggies
Vegetables with a water base like zucchini and squash will taste like steamed veggies with a roasted kick due to their large content.
Can You Use Frozen?
Frozen veggies typically only require a few additional minutes and are cooked at the same temperature.
How to Store the Cooked Veggies/How Long Will They Last in the Fridge
Store the vegetables in the fridge tightly sealed for up to 3-4 days.

Ingredients
- 1 cup chopped fresh broccoli
- 1 cup chopped fresh zucchini
- 1 cup chopped yellow squash
- 1 cup chopped cauliflower
- ½ cup chopped carrots
- ¼ cup chopped onions I use red onions.
- 2 garlic cloves, minced
- 1 teaspoon olive oil
- 1 teaspoon oregano
- ½ teaspoon smoked paprika
- salt and pepper to taste
Instructions
- Add the chopped veggies and garlic to a large bowl. Drizzle with the olive oil and sprinkle the oregano, paprika, salt, and pepper to taste throughout. Stir.
- Place the veggies in the air fryer basket.
- Air fry on 350 degrees for 8 minutes.
- Open the air fryer and flip the veggies. Air fry on 350 degrees for an additional 5-8 minutes or until the textured has reached your liking. Every air fryer cooks at varying speeds. Keep a close watch to ensure proper timing.
- Cool before serving.

Super delicious. Yes, it’s a bit of a basic recipe, but my brain gets fried by the end of the day so I appreciate someone else thinking through the ratios and options and figuring out the timing. The cauliflower was the best for me, and my husband even ate his broccoli (which he normally doesn’t do). Will definitely make again, and will play around with Brandi’s spice suggestions.

I made this for meal prep and it was just what I was in search of. I’m always looking for a way to step up my veggie game. I admit we eat a lot of steamed veggies in my house because it’s convenient. I don’t know why I haven’t made these yet! They were so good. It was quick and easy. I used the veggies I had on hand so I ended up using petite carrots, they cooked up perfectly. The veggies got a little crispy which I loved and the paprika gave it the perfect flavor. No more boring veggies for me. Oh and I made this on a break in between meetings. It was that fast!
