100% pure pumpkin on a brown surface

Fall is right around the corner! I don’t know about you but my lifestyle and body goals stick with me year round. It is essential that I have amazing recipes with a healthy spin all year long.

I LOVE Starbucks, but I am not fond of the amount of added sugar. I love to cook my favorite food and drinks at home because I can directly control the ingredients that are added.

One serving of this recipe has 3 net grams of carbs. A tall pumpkin spice latte from Starbucks has 30 grams of sugar. This recipe really slices the carb and sugar.

I tried this from Trader Joe’s and I love it! It’s so much easier than buying fresh ginger.[/caption]

In the past I used Stevia as a substitute for refined sugar in coffee. I have now switched to monkfruit sweetener.

See recipe note for how to make your own Keto Whipped Cream.

I really like that monkfruit sweetener measures like regular sugar. There is no converting like I had to do in the past with stevia!

Ingredients

  • 3/4 cup coconut milk You can also use almond milk if preferred
  • 1 1/2 -2 cups very strong brewed coffee
  • 2 tablespoons pureed pumpkin
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons sweetener
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon ground ginger
  • 2 tablespoons heavy cream

Homemade Keto Whipped Cream

  • 1/2 cup heavy whipping cream
  • 1 tablespoon sweetener

Instructions

  • Add the coconut milk, pureed pumpkin, sweetener, vanilla, cinnamon, nutmeg, ginger to a saucepan on medium heat.
  • Stir to combine the ingredients. Allow the mixture to cook for 3-4 minutes or until it starts to bubble.
  • Add the brewed coffee and heavy cream.
  • Use an immersion hand blender (pictured above) to blend the latte together. BE CAREFUL! You don’t want hot coffee to splatter and burn you.
  • Blend, blend, blend. You want to ensure the pumpkin is smooth and the spices have diluted. Blend until the mixture is no longer grainy and resembles coffee.
  • Serve in mugs. Add whipped cream, sprinkles of cinnamon or nutmeg, and a cinnamon stick to garnish.

Homemade Whipped Cream

  • Add the whipping cream to a mixing bowl. Use a hand mixer and mix for 2 minutes. Add in the Swerve. Mix until whipped cream forms.

Iโ€™m obsessed with this recipe! I avoided Starbucks for years because of the insane amount of sugar that was in a PSL and now I no longer have to sacrifice and can enjoy this treat all season long! Itโ€™s easy to make, uses REAL pumpkin and itโ€™s the warm spices that shine, not the sugar. I used almond milk as I like the little extra โ€œnuttinessโ€ it lends and used a couple teaspoons of prepared pumpkin spice. This latte is perfect!

I was wondering if I could pre-make this - cool it in the fridge and serve it over ice?

Have been making this every weekend since Starbucks came out with their pumpkin spice latte early this year (but theirs is waaaaay too sweet and sugary) - this one is amazing!

Bomb, bomb and BOMB! Iโ€™ve made this recipe three times this week! Itโ€™s amazing! I used fresh ginger twice and dried ginger once. Fresh is best! Iโ€™m also watching fat grams so I used fat free half and half and it was still the best thing ever! Whatever milk you use will make this delicious ? thanks Brandi!
