This is a quick and easy recipe loaded with so much flavor! Lots of recipes use the Hidden Valley seasoning packet and vegetable or canola oil. You can make these potatoes into a healthy dish by using a few simple pantry staples.
Table of Contents
What Type of Potatoes to Use
I love to use baby Dutch golden potatoes for this recipe. I also like the mix of baby potatoes that includes red and purple potatoes.
You can also use russet, Yukon gold, red potatoes, or even sweet potatoes. If using sweet potatoes, check out my Sweet Potato Hash recipe.
Typically, each of these varieties will have a similar cook time. Watch the potatoes closely for accurate timing.
Ranch Seasoning
I like to use my Homemade Ranch Seasoning in this recipe. The store-bought packets include ingredients like maltodextrin, artificial flavor, and carboxymethyl cellulose (used to thicken and create creamy texture).
Carboxymethyl cellulose is a water-soluble cellulose ether obtained by chemical modification from natural cellulose such as cotton linter or wood pulp.
Maltodextrin is a white, starchy powder that manufacturers add into many foods to improve their flavor, thickness, or shelf life. Maltodextrin is a common ingredient in packaged foods, such as pastries, candies, and soft drinks. Maltodextrin is high on the glycemic index (GI), meaning that it can cause a spike in your blood sugar.
I feel like I'm better off simply making my own. It's pretty easy. Feel free to use store bought seasonings if you wish.
How to Make Roasted Ranch Potatoes
The full ingredients with serving size and detailed instructions are listed in the recipe card below.
- Scrub and slice the potatoes in half. This will help them cook at an even temperature.
- Drizzle olive oil and season the potatoes with homemade ranch seasoning.
- Air fry or bake.
Potatoes Texture
The potatoes are crispy on the outside with a soft interior.
Do You Have to Soak Them?
No, generally with recipes like fries I soak the potatoes in water to remove excess starch. This helps the potatoes crisp while frying. Since these are designed to have a soft interior, no soaking is necessary.

Ingredients
- 2 pounds yellow baby Dutch potatoes See notes.
- 1 tablespoon olive oil
Homemade Ranch Seasoning
- 1 teaspoon chives I used dried, you can also use fresh.
- 1 teaspoon dried dill
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- salt to taste
Instructions
- Wash and scrub the potatoes. Slice the potatoes in half.
- Place the sliced potatoes in a bowl and drizzle the potatoes with olive oil and season with the chives, dill, garlic powder, onion powder, and salt to taste. Be sure to salt the potatoes, they will lack flavor without the salt.
Air Fryer
- Add the potatoes to the air fryer. Do not overfill the basket. Cook in batches if needed.
- Air fry for 10 minutes on 400 degrees.
- Open the air fryer and shake the basket. Air fry for an additional 2-7 minutes until the potatoes are crisp on the outside and tender to touch when pierced with a fork.
Oven and Bake
- Preheat oven to 425 degrees.
- Line a sheet pan with parchment paper and load the potatoes onto the sheet.
- Bake for 30-35 minutes until the potatoes are crisp on the outside and tender to touch when pierced with a fork. Use your judgment and add additional time if necessary.
Notes
- Cook times will vary as every air fryer and oven cook at varying speeds. Keep a close watch.
- My favorite way to make these is using the air fryer. They cook a lot faster and have a noticeable difference in texture.
- You can also use russet, Yukon gold, red potatoes, or even sweet potatoes. If using sweet potatoes, check out my Sweet Potato Hash recipe.
- If you want to use a store-bought ranch packet use 1 ounce.

I don’t care for ranch dressing. Brandi explains all of the icky ingredients in those packets and now I know why I’ve never liked it. I actually love all of the seasoning in this recipe so it’s a no brainer. These potatoes were perfectly crispy on the outside and soft inside. The seasoning was on point! I made them in the air fryer oven (I saw it on your stories!). This is an easy and versatile side dish. Thank you!

You're welcome! So glad you enjoyed it.

So delicious! Made these for breakfast with chicken sausage, arugula, and a fried egg. The potatoes came out crispy on the outside and soft on the inside. Super easy, and Brandi's tips helped a lot (especially about salting the potatoes). Thanks for another approachable and tasty recipe!!

My boyfriend and I made (with the oven because we are peasants and haven’t committed to buying and air fryer yet) and they were so easy and very tasty. We loved the homemade Rach seasoning and decided next time we were going to add even more!

My potatoes turned out perfectly - so flavorful and crispy on the outside but soft in the middle! Loved this combo of spices and I already had 3 of 4 on hand. I needed fresh chives for another recipe, so that worked out perfectly. Used the same seasonings on some roasted asparagus as well to round out my meal of salmon + these potatoes + asparagus, for a lovely and easy evening dinner!
