We ate a lot of hamburger steak and onions in TV dinners growing up. Does anyone still eat those? I remember the common one we ate had meat, potatoes, and corn.
If you are still eating these, let me introduce you to something a lot more epic and a lot less processed!
Why is it Called Salisbury Steak
Some refer to it as a fancy hamburger. It is named after James Henry Salisbury a doctor known for his comments on diets and nutrition. He advocated for making meat a core part of the diet. You can read more about the origin here.
The difference between Salisbury steak and hamburger steak is the shape of the meat. Salisbury is typically oval-shaped and hamburger steaks are more circular. Hamburger steaks are usually made with ground beef.
What Type of Beef to Use
Whenever I make patties, burgers, or meatballs using beef I use ground chuck beef. The difference between ground beef and ground chuck beef is primarily in the cut.
Ground chuck comes from the beef front and shoulders and it’s made of one cut. Ground beef is the leftover pieces that remain after cutting steaks and roast, making it several different cuts of meat.
Cube steak and round steak are also different. Cube steak is a cut of beef, usually, top round or top sirloin, tenderized and flattened by pounding with a meat tenderizer, or by using an electric tenderizer.
How to Make Keto Salisbury Steak
- Combine ground chuck beef with Italian Seasoning, almond flour, salt, pepper, Worcestershire Sauce, and 1 egg.
- Use your hands to form oval shaped patties.
- Cook the steaks in a pan with olive oil for about 4-6 minutes on each side until cooked through.
- Remove the patties.
- Add butter to the pan and deglaze.
- Add onions and mushrooms, cook until soft.
- Add broth, Worcestershire Sauce,salt, and pepper and stir.
- Take 1-2 tablespoons of the gravy mixture and combine with xanthan gum in a separate bowl.
- Add the mixture to the gravy. Stir until thickened.
How to Thicken Gravy on Keto Diet
Typically cornstarch is used to thicken gravy and sauces, but it isn’t keto-friendly at all. I like to use xanthan gum and sometimes almond flour. Almond flour does not work well for brown gravy in my opinion.
Freezer Tips
The recipe will last and freeze up to several months. Defrost in the refrigerator overnight.

Keto Low Carb Salisbury Steak with Mushroom Gravy
Ingredients
- 1 pound ground chuck beef I use organic grass fed
- 1/3 cup blanched almond flour
- 1 teaspoon Worcestershire Sauce
- 1 egg, beaten
- 1 1/2 tablespoons minced onion
- 1 teaspoon Italian Seasoning
- salt and pepper to taste
- 1 teaspoon olive oil
Gravy
- 1 tablespoon unsalted butter or olive oil
- 1/2 cup sliced onions
- 1 cup mushrooms
- 1 1/2 cups beef broth
- 1/2 teaspoon xanthan gum
- 1 teaspoon Worcestershire Sauce
- salt and pepper to taste
Instructions
- Combine ground chuck beef with Italian Seasoning, almond flour, minced onions, salt, pepper, Worcestershire Sauce, and 1 egg.
- Use clean hands to form 4 oval shaped patties.
- Cook the steaks in a pan with 1 teaspoon of olive oil on medium-high heat for about 4-6 minutes on each side until cooked through. Be careful to ensure each side of the beef has been fully cooked prior to flipping. If you flip the patties too soon they will fall apart.
- Remove the patties, cover and set aside. You can drain excess fat from the skillet if you wish. I typically reserve some grease to make it easier to deglaze the pan.
- Add butter to the pan and deglaze the pan.
- Add the onions and mushrooms, cook for 2-3 minutes or until soft.
- Add the broth, Worcestershire Sauce,salt, and pepper. Stir and deglaze.
- Take 1-2 tablespoons of the gravy mixture and combine with the xanthan gum in a separate bowl. Stir until the mixture becomes thick.
- Add the mixture to the gravy. Stir until thickened.
- Taste the gravy repeatedly and adjust seasoning to taste to avoid bland gravy.
- Add the beef patties back to the pan with the gravy and stir.

Hi thank you for this recipe. I'm new to all this & I'm not even sure if this blog is even active anymore but I just wanted to reach out to ask if there's anything else I can use that's lower in carbs in place of Worcestershire Sauce? Also, is there something else I can use in place of the almond flour? I can't really have any nuts or seeds. Can pork panko be used instead or not really? THANK YOU SO MUCH

You can omit the sauce if you don't wish to use it. I've never tested this with pork panko. If you try it let me know how it turns out!

This was delicious. I was craving comfort food in the middle of the summer and this recipe was perfect for that! The ingredients and directions were straightforward. The only change I made was excluding mushrooms from the gravy. It still turned out well and with plenty of flavor. Thank you, Brandi!
