If you are looking for a flourless, yet delicious sweet bread recipe, look no further! This recipe won’t disappoint.
What Type of Sweetener to Use
I like to use Lakanto’s granular monkfruit sweetener Monkfruit is zero-calorie, zero-carb, and is made without the use of artificial sweeteners. The best thing about it, is it measures 1:1 to like table sugar. This makes it super easy to convert conventional recipes. No need to look into a conversion table, it’s an even swap, which is super convenient!
It also tastes like sugar. There’s no aftertaste or cooling effect like you find with some sweeteners.
Feel free to use your preferred sweetener. If you use stevia, maple syrup, or artificial sweeteners, you will have to convert the servings. Since monkfruit measures 1:1 you can follow your standard method for calculating it.
How to Make Healthy Sugar Free Zucchini Bread

- Preheat oven to 350 degrees.
- Combine eggs, vanilla, and olive oil in a medium bowl.
- Grate the zucchini and drain excess water. Add it and the ginger to the bowl with the eggs and oil.
- Add almond flour, baking powder, salt, cinnamon, nutmeg, and sweetener to a large bowl and stir.
- Combine the wet and dry ingredients. Blend with a mixer.
- Pour the mixture in a loaf pan and bake.
How To Cut Zucchini For Bread
I like to use a cheese grater. Run the zucchini along the edges of the grater.
How Does It Taste

Can You Substitute Coconut Flour For Almond Flour?
No, coconut flour is not interchangeable. It absorbs moisture much differently than almond flour.

1 cup of zucchini has 4 total carbs, and 3 net carbs. The carbs are relatively low.
How Long Does It Stay Fresh in the Fridge?
You can store the zucchini bread at room temperature for 1-2 days. It will last in the fridge for up to a week.
Freezer Tips
To freeze the zucchini bread, wrap it in foil and freeze it for up to 3 months.

Healthy Sugar Free Zucchini Bread
Ingredients
- 3 eggs
- 1/2 cup olive oil or avocado oil
- 1 teaspoon vanilla extract
- 2 1/2 cups blanched almond flour
- 2 teaspoons baking powder
- 1 cup sweetener
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ground ginger or minced ginger
- 1 cup grated zucchini
- 1/2 cup nuts I used walnuts
Instructions
- Preheat oven to 350 degrees.
- Using a cheese grater, grate and shred the zucchini into smaller bits. Place the zucchini on a paper towel. Sprinkle salt throughout. This will allow the zucchini to sweat out excess moisture. I let the zucchini sit for 30 minutes to release moisture.
- Add the eggs, olive oil, and vanilla to a medium-large bowl and whisk.
- Squeeze the excess liquid out of the shredded zucchini. Add the zucchini and ginger to the eggs and olive oil. Stir.
- Add the almond flour, baking powder, granular sweetener, cinnamon, nutmeg, and salt to a mixing bowl and stir.
- Add the zucchini and egg mixture to the dry ingredients in the mixing bowl.
- Use a hand mixer and blend until fully incorporated.
- Line a 9×5 loaf pan with parchment paper.
- Spoon the bread batter into the loaf pan. Smooth the top of the batter.
- Sprinkle the walnuts throughout the top.
- Bake for 60-65 minutes until you can insert a toothpick and it returns clean.
- Cool for 10 minutes before slicing.

Absolutely wonderful! Easy to follow recipe. On a cold morning with a cup of coffee or tea or whatever you fancy warm drink is absolutely heaven. Plus I have no guilt about eating it because of the healthy ingredients. A little hack, if you live in a area like me where it is hard to find good fresh zucchini sometimes, Harris Teeter has the fresh zucchini in spiral is the produce section. Get it and still do the process of getting the excess water off and then chop it up.
